Ingredients
• 1 rack of lamb;
• 1 bunch of Chinese chard;
• 250g of cabotiá pumpkin;
• 100 ml fresh cream;
• ½ chopped onion;
• 2 chopped garlic cloves;
• 80 ml of Lagar H Frantoio olive oil – Limited Edition;
• Salt and black pepper.
Method of preparation
1) In a frying pan, brown the pumpkin cut into cubes in Lagar H Frantoio olive oil. Add the chopped onion and garlic and sauté. Then add the fresh cream and cook until the pumpkin is soft.
2) Remove from the heat, strain the pumpkin from the liquid and blend in a food processor until smooth. If necessary, add more cooking cream to make the puree. Season with salt.
3) For the lamb, season with salt and pepper on all sides. Grill until golden and reach the desired doneness. Reservation.
4) To finish, quickly sauté the chard in Lagar H Frantoio olive oil, season with salt and set aside.
5) To assemble, place the pumpkin puree in the center of the plate, add the lamb and chard. Finish with a drizzle of Lagar H Frantoio olive oil.
