Ingredients

• 50 ml extra virgin olive oil Lagar H Blend from Safra (for sautéing);

• 1/2 chopped onion;

• 200 g carnaroli;

• 150 g of dry white wine;

• 500 ml of vegetable broth;

• 80 ml extra virgin olive oil Lagar H Monovarietal da Safra – Koroneiki (to finish);

• 50 g of Parmesan cheese.

Method of preparation

1) In a pan, with the Lagar H extra virgin olive oil of your choice, sauté the onion without letting it brown.

2) Add the rice and sauté well, until all the grains are completely covered in olive oil.

3) Add the white wine and let it reduce a lot, but without drying out.

4) Gradually add the boiling vegetable broth, stirring constantly. Check the doneness of the rice, which should be “al dente” (approximately 18 minutes).

5) Season with salt and freshly ground black pepper.

6) Finish with the Lagar H extra virgin olive oil of your choice and cheese, and stir the preparation vigorously. Serve immediately.
